What is this?:
This is one of the hidden gems of our cuisine. Originally from the Ebro valley, they are called crystal peppers because they are so thin they seem to be made of glass. They are usually eaten dry and are known as “chorizo peppers”. In Rosara, we get them fresh from the farm, grill them under beech wood and peel them without water to retain their exceptional flavour. The peppers have streaks of red and green, just when they are right for consumption.
Cristal peppers, salt and acidulant (citric acid).
